180 days. If you're there Christmas week, sooner is a good thing.

They can be made 180 days out.

If you are staying at a Disney Resort and have your reservation
number, you can make the reservations for your entire stay (but not
more than 10 days) on the day which is 180 days from your arrival.

Default Dinner Reservations ?

I made all my reservations in May for my September trip - first one
since 1980. They asked which resort I was staying at but no reservation
number and no credit number. I asked about cancelations or changes and
she told me I could change anytine and they would appreciate a 48 or 24
hour notice, but there were no penalties.

Some of the dinner shows require a credit card but not the restaurants.

You can make reservations 180 days in advance (*not* the first person to say this).
For Christmas, you must make reservations on that day, to be safe. Why take the risk of not getting
your booking.
