Default California Zephyr - Amtrak - Which Direction is Best?

I was thinking of taking this from Emeryville, CA to Denver. How is
the scenery compare to taking from Denver to CA which I could do? Looks
like either way there is enough in the daylight...

Having done both directions more than once, I don't think there's
any reason to prioritize one direction over the other. Both have
their pluses. The variation in quality is random, based more on
unexpected events than it is about the direction of travel.

I'd recommend westbound, especially if we're talking about travel at
this time of year. Eastbound, the descent of the Front Range of the
Rockies from the Moffatt Tunnel into Denver would be after dark, all
the more so if (as often happens) the train is running late.
