Which station has seen the biggest reduction in useable platforms over the
years (not counting temporary situations like Kings Cross on Tuesday
morning)?

The Manchester end of the Woodhead route provides a fair few contenders:

Fairfield: 6 to 2
Guide Bridge: at least 4 (were there bays other than for animals?) to 2
Dinting: 4 to 2
Godley Junction: 4(?) to 0
Gorton: 4 to 2
Ashburys: 4(?) to 2
Glossop/Hadfield: 2 to 1 each

Even without counting the extensive goods yards that many of them had.

On the positive side, though, there have been some increases:
Flowery Field: 0 to 2
Godley: 0 to 2
Hattersley: 0 to 2 (faces, only one platform)

It had 4 in 1961 but was down to 1 by 1963 (a 75% reduction)

Could this be Tynemouth? The Tyne and Wear Metro still used two through
platforms, but there are (or were 2 years ago) quite a few intact but
overgrown platform faces on the coast side as well.

Willesden Junction had 15 before the main line platforms were closed. It now
has 5 - 2 high level and 3 in the 'New' station, one of which is a
little-used Bay.
