Ryanair- what happens if one person on itinerary can't make the trip?

No problem. FR will just mark them down as a no-show, and they'll lose
their fare and tax of course. If there's any reason why they think they
might be able to claim on insurance/get taxes refunded then they should call
ahead and cancel the booking officially, otherwise just let it slide..
