Interesting, isn't it?
I think it's a poor choice of words, but an accurate sentiment in the
sense that the airlines are trying very hard to please people in ways
that don't invove traditional ideas of "service".
It's much easier to regiment a video system than recruit, train, pay,
and keep happy a large force of individuals all acting consistently...

They weren't. The rationale for the FAA authority comes from the fact
that the aircraft was originally certified under the FAA's auspices,
and the Swiss cert. is based on the FAA's certification program (in a
gross over-simplication, the Swiss cert. basically says "See FAA
data").
Thus since the basic test data for the type is *owned* by
McDonnel-Douglas aka Boeing, and *not* available to third parties
(it's proprietary information), one might reasonably argue that
anything added to the aircraft must fit within information held by
McD-D and regulated by the FAA...

Not exactly, as there was no way for FAA, or their Designees, to approve a
foreign installation. None of the "FAA Data" had any legal basis, due to
the place of completion of the work.

No, the only regulatory basis the US uses in the matter of US Type
certificated aircraft with foreign operators is to prohibit them from being
sold back into the US liability pool. Where the Type cretificate has not
been maintained, no US carrier may purchase that aircraft. So what happens
is that the resale value and resale availability for the owner having
altered their airplane.
