Cross Training - January training Camp

I am looking for some advice on behalf of a UK rowing club.
We would like to do a cross training camp in Jan 2004, but were unsure
of where to start! All fairly speculative at the moment.
There would be between 15 - 30 athletes and coaches. We are all fairly
competent roadies and runners, and would be looking for access to a
weights gym too. A pool and good weather would be neat too... ;)
We all have our own bikes - so I guess accommodation, the gym and bike
storage are the key requirements. We thought of Club La Santa and
whilst it looks fantastic, it is somewhat expensive. Southern Europe
or USA? Aus is a bit too far for ten days.
Any assistance would be much appreciated.
