Default B&Bs in Ireland

Having booked our flights (time of holiday) and our hire-car on the
basis of feedback to earlier postings, I now seek advice re B&Bs. I
last visited Ireland back in the seventies; and have nothing but
wonderful memories. On that occasion my wife and I stayed at B&Bs all
around the country; stopping whenever we felt so inclined. No
problems! We will be going after schools resume (August 22 - 31) and
so places should not be unduly crowded. But, all the travel brochures
and websites seem to be pushing various B&B voucher schemes... Is it
best to make bookings in advance via one of these schemes (before we
leave Oz) or can we still 'wing-it'?
