California Here We Come (and need tips)

As the title says, we're off to California next month. Planning on the Disney
parks, Knotts, MM and Universal. Need all the tips we can get, along with any
off the beaten track restaurants etc. Oh yeah, and should Flashback be avoided
at all costs?

Don't worry about Flashback. It most definitely won't be open in the off
season.
