I've been to Syros twice in the last few years but I only spent a few days
each time. The main town Ermopolis is very Greek in character (i.e. noisy)
and quite fun to stay in for a day or two. It's built around two hills each
topped with a cathedral - one Greek Orthodox and one Catholic. However once
you have climbed both the hills and spent a bit of time in the tavernas on
the waterfront and main square there is really not much to do.
I understand there are some tourist resorts being developed around the rest
of the island. If that's the sort of thing you like it may be OK for you -
otherwise I wouldn't really recommend Syros for a holiday.
Of the islands you mentioned originally, Sifnos would be my choice. Even
better would be Milos (the next stop on the ferry). Wouldn't you like to see
the place where the Venus de Milo was actually found? The French really
should give it back ;-).
