Mark,
It depends what you are looking for. I know Lesbos and Paros, but not
Sifnos. One disadvantage of Lesbos against the others, if you are going by
sea from Athens, is the distance (and frequency of ferries). You will get to
Paros in about 6 hours on a normal ferry or 4 hours on a fast hydrofoil.
Sifnos is about the same distance, but there may not be any fast boats -
it's on a less popular ferry route. Lesbos is much further: I wouldn't think
of getting there via Athens - I would fly direct from the UK. Your plans may
not allow this, of course.
