Default Rethymnon hotel needed - And how long should I stay?

After seeing Knossos and the archeological museum in Heraklion, I plan
to take the bus to Rethymnon and spend at least one night there before
driving down to Plakias. I will probably arrive in Rethymnon in the
evening. Can someone recommend a good but inexpensive hotel there?

Also, is one night enough in Rethymnon or should I stay a second night
so I can spend a full day there before heading south? I don't want to
be in too big of a hurry, but I also don't want to miss anything if
it's worth staying longer. Normally I would not try planning things
like this but I need to know when to have my rental car reserved.
Thanks.

Sounds like you are trying to do too much at once, relax and hang
around, go to a small mountain village, find a beach, take a walk in the
hills, sit in a cafenion, you could not see everything in a month of
Sundays. Personally I find a month at a time in Greece is about the
minimum I can stay and if I am traveling to look at things, try not to
make an itinerary. I just talk to people and take their recommendations
occasionally. People are usually willing to share their experiences and
you can save a lot of wasted trips.
