Default Hotel bookings - how far in advance?

Hello,

I plan to travel to Switzerland (Interlaken) , Italy (Venice, Florence,
Rome) and Greece (Athens) next May with my wife.

How far in advance do I need to book reasonably-priced hotels at these
places? By reasonable price I mean <= $100/night

I usually leave it until the week before to get the best prices.

We normally book 1-2 months in advance, no matter the time of year, and have
had reasonable success in getting what we want. We make sure to book
refundable/cancellable rooms for flexibility.

I notice you are posting from Canada. 100 Canadian dollars is about 70
Euros. Both Switzerland and Venice hotel rooms can be expensive. In case
you didn't know, your average 100 CAD room in Canada is likely to be much
larger and nicer than a 100 CAD room in Europe.
