I may go myself - I'm curious to know what constitutes "good" Dutch
food. Something other than uitsmijters and stampot, I hope.

I don't see myself paying 20 Euros for a 5 Euro bottle of wine and
saying thanks for the pleasure of doing so, though.

Seem to be 15 Euro for bringing the bottle to the table and open it.
Difference ?

That's for sure, but I never spend 100 Euros on wine anyway :-)

IMO 10 Euros is about the price you need to pay to get a decent wine,
and beyond that the returns start diminishing.

Which is not to say that if someone else pays I won't be happy to drink
a really good bottle :-]

Default Travelling to Amsterdam - a couple of questions

Actually a 150% markup to 250% of the retail price is not uncommon in
the restaurant business. Then the servers expect that you should give
then 50% of the retail price as a tip.
