Default Renting a car

We will be traveling to Disney (Carribean Beach) in Sept. Since I
don't need a car for our whole vacation, I don't want to rent a car,
at the airport . Has anyone rented a car after arriving at the resort.
Is it an easy process or should I just bite the bullet and get the car
at the airport. The reason to get the car at all, is that getting to
some of the dinners that are not in the parks is supposed to be
tedius, and we are traveling with a one year old.

You might be solving a non-problem. Traveling on Disney transportation
with a 1 year old isn't difficult. If you really are overwhelmed, take
a taxi, available at all the resorts all the time. A lot less hassle
and maybe less expense than renting a car.

All this assumes you're staying and dining on property. YMMV
