Any interesting excursions in Belize besides snorkeling?

Belize is still my favorite port. I've done several things there.
My favorite was a snorkel trip to Shark/Ray Alley. This included a trip to
Caye Caulker. One couple on the excursion (we booked through an independent
company not the cruise line) opted not to snorkel, but instead spend the day
on the Caye. They had a great day, too.
A very close second was a trip to one of the Mayan Sites.
Several people have mentioned the sites, but not a specific site that I've
read.
We went to Xunantunich. It's on the Guatemala border. It's quite a bus ride,
but not so long that you miss anything at the site. Of the many Mayan sites
(The Maya HATE the term "ruins") that I've visited, Xunantunich was a tie
for me with Uxmal in Mexico. Probably because Xunantunich was the first
pyramid I climbed. And the view from the to was amazing! If walking is a
problem for anyone in your party, you'd miss nothing not climbing. But it
isn't like a traditional pyramid, it has more of a switch-back walkway than
stairs.
If you do any of the Mayan sites, I'd suggest taking the cruise line
excursion.
