My daughter and son-in-law did this on their honeymoon and loved it.
This was back in 2000, so it might of changed since then.

We did this about three years ago. The rafting trip was very nice and our
"captain" stopped various times along the way to carve our names and date on
a coconut shell. Near the end he "suggested" a $40~$50 for his services
would be appropriate. I felt generous and gave him $10. He was not happy.
