Vegetarian food in the Caribbean

I am thinking of going to Antigua in June and would like to know if,
as a vegetarian I will be stuck with just rice and beans.

Also any recommendations on where to stay would be helpful too.

I just got back from Antigua -- I don't eat meat, but I do eat fish.
However, I had several meals that were strictly veggie -- veggie curries,
veggie roti, veggie filled pies. I actually thought it was a pretty good
place for a vegetarian.

I will be traveling to St. Thomas, St. Croix, and possibly Tortola an
Dominica in June. Last time I was on St. Thomas I had a hard tim
finding more than just veggie burgers. Are there any good vegetaria
(no seafood and dairy is fine) restaurants on these islands? And wha
restaurants are good for veg-friendly options? Thanks

There were a few nice places on Dominica to eat, though one of them
didn't (re)heat their food enough and probably gave us some serious
stomach bugs.

A lot of rastas don't eat meat, so vegetarianism is actually more
widespread than you'd think, though perhaps not on the tourist
mainstream.
