Wondering what opinions are on the differences between these two hubs:

    Shimano HB-M590 Deore Front Hubs

    Shimano Tiagra HB-4500 Front Hub

And color. I believe the seals (very nice, btw) are the same.

So is there a going to be a major improvement with the 105 hubs in
terms of longevity (in lots of rain)?

No. Get the color that you like, and service the hub before using.
That means enough grease to ooze out when you pop the seals back on.
Don't forget to set the preload on the cones a wee bit loose so they
tighten perfectly with the QR skewer. If you can feel play at the hub
by wiggling the rim in the frame, the thing's loose, and if you can't
feel play when wiggling the axle out of the frame, it's too tight...
