A critical factor is the number of doors per car. In Paris, both the
RATP (RER line "A" )and the SNCF (RER line "D") ordered similar dd
stock - except that RATP ordered theirs with three doors par car,
whereas the SNCF has only two. Passenger exchange is considerably
slower on the SNCF stock.

Paris would probably be a good place to get stats from, some of the
RER lines also run single deck stock and I seem to remember one of the
lines having both types. Dwell times for different types of stock
should then be comparable as the same 'mob' is riding all types of
trains.

You could accurately record Sydney dwell times, but then making a
statement on how single deck stock affects this would be pure guess
work.

Dwell time includes time for opening the doors. Speed door opening and dwell
time will be reduced.
