EPCOT has two sections to the park. Futureworld which is the front part
closes at 7pm except on EMH nights which in the last week of Aug. would
be the 31st. They'll close 3 hours later at 10pm. World Showcase is
the back part and is open till 9pm except on the 31st when they are open
till midnight for all Disney resort guests. The last dinner seating
time I believe is at the closing time (9pm).

Coral Reef and Le Cellier are going to be fully booked unless you happen
to call just after someone canceled (we got a reservation for Sept. just
a couple days ago after being told before that it was booked). They are
both very good so worth a try.

Try the Tepanyaki restaurant, Marakesh, Biergarten, San Angel, Les Chefs
(France) for starters.

Just a short 5 minute boat ride or monorail from Magic Kingdom try
Ohanas or Kona Cafe at the Polynesian resort. Both are excellent. The
Concourse steakhouse at the Contemporary resort is a couple minute
monorail ride from Magic Kingdom or could walk. From the beach at
Polynesian you can watch the fireworks at Magic Kingdom.

Boma Buffet at Animal Kingdom Lodge is excellent and is a very short bus
ride from Animal Kingdom park.

At Boardwalk is Spoodles which has very good food. It's a short boat
ride from MGM or Epcot. We try to eat there early and then go to MGM to
watch Fantasmic at 8:30 (have to be there before 8).
